冬令进补应该有顺序

   广东人历来讲究进补养生,所以冬令进补已成为较普遍的生活习俗。因此入冬以来,不少市民,特别是老年人前往药店购买滋补品,打算送人或自服。可许多人都是买了补品就吃,这不仅起不到进补的作用,有时还会有害。有关营养专家则提醒:冬令进补应有序———先调理肠胃,再食补,后药补。 


  调理肠胃应在先 


  调理肠胃在先,即进补之前清理出一个良好的胃肠内环境。现代医学研究表明,人体肠道内生存着多种细菌,它们可分为有益菌和致病菌。在健康的人体中,有益菌占据优势,并保持一定平衡,这对人体健康起着很大作用。年龄增大后,肠道内的致病菌增多,人体解毒功能下降,毒素在体内易蓄积,便出现了一系列胃肠道症状。因此补充有益菌,保持一个良好的平衡环境是根本。喝点酸奶等补充有益菌群的饮品是首选。 


  平衡环境才食补 


  针对老年人的生理特点,除了一日三餐定时定量以外,营养一定要跟上。老年人大脑在萎缩,脑细胞的神经递质有所减少,记忆力往往衰退较快,可补充鱼、虾、蟹、海参、贝类食品、豆制品以及核桃、栗子、南瓜子、杏仁、桂圆、荔枝等坚果。因为这些食品多含锌、硒、碘等微量元素,有益于预防记忆力衰退及动脉硬化。大蒜、红薯、土豆也是很好的保健食物。 


  针对情况再药补 


  针对各人的实际情况,在食补的前提下,可适当吃些药品。如老年人的眼睛由于晶体老化和混浊,导致远视及白内障,使视力下降,服用维生素A,可缓解角膜发干,增加视网膜感光率;另外,服用维生素C、E能增强免疫力,防止眼动脉和全身动脉硬化等等。也可在医师指导下选择些膏方、药酒、药膳等。

  
  补药补品的区别 


  冬季进补,包括服补药、吃补品。补药与补品,各有特点和特色。

 
  补药,多指能调补气血阴阳、增强正气、经常用于配方治疗虚性疾病的药物,最好请医生开处方或遵医嘱服用。

  
  补品,多指能滋养、强壮身体,经常用于配膳,治疗虚性疾病的食品,一般可以根据自己的口味和喜爱去烹调食用。

  
  羊肉狗肉有作用

  
  羊肉和狗肉是冬季进补佳品。 

 
  羊肉性温,能暖中补虚,补中益气,开胃健力,主治虚劳寒冷,五劳七伤。汉代医圣张仲景首创的当归生姜羊肉汤,就是一个典型的范例。

  
  狗肉亦性温,能补胃气,暖腰膝,益气力,补血脉,填精髓,素体阳虚内寒者均可服用。 


  食补可能胜药补 


  其他如牛肉、鸭肉、母鸡肉、乌龟肉、鹌鹑肉以及各种蛋类,乳制品,各种动物内脏,都有补养作用,适当服用有益健康。对某些人、某些病来说,食补还有可能胜于药补。

  
  而桂圆、荔枝、莲肉、淮山药、黑豆、大枣,即是补药又是补品,适应广泛,疗效可靠。对久病,年老虚弱者最为适合,可常服黑豆桂圆大枣汤,取黑豆30克,桂圆肉15克,大枣30克共煮,分早晚两次服之,黑豆补肾阴利水,养血除风,桂圆肉补心气、养阴血,大枣益气健脾,可收多脏同补之效。 


  补药补品巧配合 


  虚证有单纯复杂之分,进补有单用兼用之别。 


  病症单纯的可单服补药或补品,病症复杂的可兼服补药或补品。补药与补品同时服用,可取长补短,相得益彰。将补药与补品巧妙配合,经特殊加工,使之成为色香俱全,美味可口,又强身健体,防病治病者称为药膳。是老百姓喜爱的进补方法。如冬令补品:“红煨狗肉”,选新鲜狗肉,配白附片,当归、肉桂、生姜等药,用红煨的方法烹制,不仅色鲜味美,落口消溶,更因其具有补中益气,温肾壮阳的作用,而多为老年体衰或肾阳亏耗者选用。 


  又如苁蓉蒸羊肉,取羊肉益气补虚,温中暖下,肉苁蓉温肾壮阳,二者配合,清蒸入席,肉烂汤清,补而不腻,于阳虚体弱,畏寒肢冷,或性功能减退者极有补益。湘菜中滋补名馔“龟羊汤”,取龟,羊肉各500克,加党参、枸杞、白附片,当归各10克,并加佐料烹饪,对体质虚者有特殊的功效。
